Fakeaway Chicken Korma

Shopping & Ingredients List:

  • 1kg Skinless Chicken Breast, cut into chunks
  • 200g can Chopped Tomatoes
  • 1 Onion, grated
  • 5 tbsp Reduced Fat Fromage Frais
  • 200ml Chicken Stock
  • 3 tsp Garlic, crushed
  • 3 tsp Fresh Ginger, grated
  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Coriander
  • 2 tsp Korma Curry Powder
  • 2 tsp Cumin Seeds
  • 1 tsp Cardamon Seeds, crushed
  • ¼ tsp Cloves, crushed
  • 1 Cinnamon Stick
  • 3 Bay Leaves
  • 1 tsp Coconut Oil
  • Salt & Pepper to season

Method

1. Place a large non-stick frying pan with the coconut oil over a high heat. Add the bay leaves, cinnamon, cardamom seeds, cloves, cumin seeds & onion. Stir-fry for 5-6 minutes.

2. Add the coriander, cumin, ginger, tomatoes & korma curry powder & stir-fry for another 3-4 minutes.

3. Add the chicken to the pan & pour over the stock. Bring to a boil & season well, cover with a lid, lower the heat to low & simmer gently for 20-25 minutes. Stir occasionally.

4. Remove the pan from the heat & stir in the fromage frais. Serve immediately.
